Why to measure ultra-processing?

Nearly 35% of the calories consumed in France come from ultra-processed foods. However, their consumption is linked to an increased risk of obesity, diabetes, cancer, and cardiovascular disease.

Ultra-processed foods are sometimes not easily identifiable today because they may benefit from “healthy” marketing or even a positive Nutriscore A or B rating. For example, many cereal bars for athletes, vegetable “steaks,” and gluten-free cookies are ultra-processed products.
